Medipol students bring a modern twist to Gaziantep cuisine
Students from Istanbul Medipol University’s Department of Gastronomy and Culinary Arts secured second place at GastroAntep 2026 with a menu that reinterpreted Gaziantep’s local ingredients through modern culinary techniques. Drawing inspiration from the region’s traditional culinary heritage, the three-member team presented their original dishes to an international jury.

Firik (roasted green wheat), zahter (wild thyme), Antep pistachios, menengiç (terebinth), and Araban garlic… These distinctive ingredients of Gaziantep cuisine were reinterpreted using modern gastronomic techniques in a menu created by Istanbul Medipol University students. Esma Sultan Büyükkapucu, Gökçe Birdal, and Talha Akıncı, students from the Department of Gastronomy and Culinary Arts, combined traditional flavors with innovative cooking techniques, textures, and presentations at the International Local Chef University Competition, held as part of GastroAntep 2026.

Organized by Sözen Organization in cooperation with Gaziantep Metropolitan Municipality on October 11, 2026, the competition brought together gastronomy students from different universities. Held under the theme “Modern Dishes Using Gaziantep’s Local Products” the competition challenged participants to create an original three-course menu consisting of a starter, main course, and dessert using regional ingredients. Within the allotted time, students prepared and presented their dishes to a jury of experienced professionals from the gastronomy industry.
A NEW INTERPRETATION OF GAZIANTEP CUISINE IN THREE DISHES
The menu created by the Medipol students consisted of three original dishes inspired by Gaziantep’s culinary heritage.
The starter, “Kala-i Füsus (Ring Castle),” combined firik, walnuts, and minced beef with İslahiye pepper jam, smoked yogurt infused with fresh zahter, seven-spice chickpeas, and caramelized onion cream. Finished with red pepper oil and zahter sauce, the dish highlighted the distinctive aromas and textures of regional ingredients.

The main course, “Derviş’in Bereketi (The Dervish’s Bounty)” drew inspiration from traditional Gaziantep cuisine. Built around lamb loin and lamb jus, the dish featured kemeli simit kebabı (a regional kebab incorporating truffles and fine bulgur), sumac-infused baklava pastry layers, mutabbal (an eggplant-based preparation), and mashed potatoes flavored with Araban garlic. The students reinterpreted familiar regional flavors through contemporary cooking and presentation techniques.
The dessert, “Antep Atomu (Antep Atom)” brought together Antep pistachios, menengiç, Antep cheese, and figs. Featuring choux pastry filled with pistachio cream, caramelized fig cake, Antep cheese cream, menengiç mousse, and a variety of crunchy textures, the dessert combined local ingredients with modern pastry techniques.
ACADEMIC GUIDANCE THROUGHOUT THE PREPARATION PROCESS
The competition menu was developed through an extensive preparation process under the guidance of the students’ academic instructors. Lecturers Mert Karakuş and Hande Baykal from the Department of Gastronomy and Culinary Arts coordinated the team’s preparation and organization.

Throughout the process, the students worked on menu development, recipe formulation, selecting cooking techniques, and designing plate presentations. The team also completed practical training tailored to competition conditions, with other academics from the department contributing their knowledge and experience.
The preparation process enabled the students to apply the theoretical knowledge acquired during their education in professional kitchen conditions while further developing their teamwork skills.
FROM LOCAL INGRIDIENTS TO MODERN GASTRONOMY
The competition was held in memory of the late Mehmet Ragıp Güzelbey, known for his contributions to Gaziantep gastronomy, with Chef Maximilian J. W. Thomae serving as jury chair. The judging panel included executive chefs from various hotels and restaurants across Türkiye, alongside gastronomy professionals.
Commenting on the event, which also received national media coverage, Mert Karakuş, Lecturer at Istanbul Medipol University, emphasized to Anadolu Agency the importance of reinterpreting Gaziantep’s rich variety of local ingredients through modern culinary practices.
Karakuş stated that the festival provided a valuable experience both for the students’ professional development and for promoting the city’s gastronomic heritage.
